Summer has a wonderful way of pulling us outdoors. The longer, brighter days pull us from the couch to the beach, backyard, or just around the neighborhood for a walk. As the sun beckons us out longer, the kitchen can get a little quieter. The desire for quick and less piping hot dishes grows. More cooling fruit and salads dominate our plates. They even come together in a great marriage.
My Peach and Walnut Romaine Salad is a quick way to enjoy summer. Peaches mix with crisp romaine and get a little crunch from walnut pieces. Instead of a dressing, I opted for my favorite new dressing, a mashed avocado. To add a balance to the sweetness of the peach and the creaminess of the avocado, I crumbled up some Kerrygold Skellig Sweet Cheddar and threw that in. Though sweet is in the name, Skellig still has the subtle saltiness I love about Kerrygold’s cheddars. The cheddar works well with all of other ingredients perfectly.
The best thing about salads is that they’re so customizable! You can easily swap out romaine for any salad greens you have, or if you want to add an additional green to the romaine, go for it. You can swap out the walnuts for pine nuts, almonds, or pistachios. You can even toast the nuts before serving to unlock more flavors, if you’re really excited for a good salad. The Skellig could also be grated over the top rather than crumbled.
I used white peaches for this salad, but feel free to use any variety of peach you have on hand. You can even use a not completely ripe peach as well. That can keep the potential sogginess factor down. If you’ve got an overripe peach, save that for a snack or your next baked good. This salad is best enjoyed immediately, unless you’re using an underripe peach. I used a mandoline to get the peaches thinly sliced, but you can also hone your knife skills and thinly slice them with a knife or cut the peaches into bite-size chunks. Whichever you prefer.

Ingredients
- ½- 1 head to romaine lettuce, washed and cut into bite-size pieces
- 1-2 underripe/ripe peaches, thinly sliced
- ½ avocado, mashed
- 1/4 c walnut pieces
- Kerrygold Skellig sweet cheedar, crumbled, amount to your taste
Instructions
In a mixing bowl, combine lettuce, walnut, avocado and cheese.
Toss until avocado is well incorporated.
Add in peaches, lightly toss, then serve.
